Cornbread
2 cups self-rising corn meal
(If using plain corn mean, add teaspoon salt,
teaspoon baking soda, and 2 teaspoons baking powder.)
1 - 1 cup whipping cream
1 egg (beaten)
cup butter (melted)

Heat iron skillet until almost smoking.
Add all ingredients - don't over-mix.
Pour into hot skillet and pop into oven.
Bake 20-25 minutes in 425 oven.

Corn Cakes
2 cups corn meal (self-rising)
1 tablespoon flour (self-rising)
2 eggs
1 cups milk
4 tablespoons butter (melted)

Mix all ingredients and pour pancake-sized into hot skillet.
Fry until golden brown on both sides.
