her into being on my show 2 weeks in a row!!!

Now, I know this is a old picture, but since I

Coconut Surprise Cake
½ cup shortening
1¼ cup sugar
½ cup whipping cream
1¾ cup cake flour
3 teaspoons baking powder
1 teaspoon salt
¼ cup whipping cream
1 cup coconut
2 eggs
1 teaspoon flavoring
Sift together all dry ingredients.
Cream sugar and shortening.
Mix all together alternating with ½ cup
whipping cream and cream for 2 minutes.
Add 2 whole eggs and ¼ cup whipping
cream, vanilla, and coconut.
Bake for 35-40 minutes in 325° oven.
Ice with coconut cream cheese frosting.
Coconut Cream Cheese Frosting
½ cup butter
2 tablespoons cream of coconut
5 cups confectioner's sugar
Cream all ingredients together.
