Chicken Sauce over Puff Pastry



Begin with a roux ... cover bottom of skillet with olive oil and add
enough flour to oil to make a very smooth paste.
Brown, very slowly, until a nutty brown color.
Now, have fun! Add whatever your family likes.

What we used ...

3 chicken breasts (chopped small)
2 small fresh tomatoes
2 small Irish potatoes
2 small carrots
1 small onion
2 cloves of garlic
1/4 cup English peas
1/4 cup canned corn
1/4 cup butter beans
salt and pepper to taste

Simmer just until tender. Spoon over puff pastry and enjoy a meal fit for a King and Queen!
