Strawberry Bread

3 cups all purpose flour
1 teaspoon salt
2 cups sugar
1 teaspoon baking soda
1 tablespoon cinnamon
1¼ cups vegetable oil
2 cups frozen strawberries -- thawed
4 eggs -- beaten
1 cup chopped pecans -- optional

Combine dry ingredients and add remaining items except
for pecans. Add pecans last. Pour into two (2)
greased and floured loaf pans.

Bake in 350° oven for 60-70 minutes.
Mini loaves take about 30 minutes. Makes 4-5 mini loaves.

Strawberry Butter

1 stick real butter
1 teaspoon powdered sugar
1 teaspoon lemon juice
3 1/3 cup strawberry preserves (small jar)

Soften butter, but do NOT melt it.
Mix all ingredients together. Pour into small, round foil cups.
(Muffin pans with foil liners will also work.)
Refrigerate.
