Dana and Jeff joined us again this week and we would
like to thank them for spending time with us!!
Dana Bozeman is a teacher at Forest Hill Elementary School
and Jeff Miller is an attorney with Sirote and Permutt.
They will be getting married on June 1, 2002 at Bellingrath
Gardens .... we wish them all the best!!

Open Face Tacos

2 lbs. ground beef
1 large bell pepper (diced)
1 onion (diced)
1 head of lettuce (shredded)
2 cans tomatoes (diced)
1 lb mild Cheddar cheese (grated)
1 bottle ketchup
1 pack of corn tortillas
4 tablespoons chili powder
1 tablespoon garlic powder
1 teaspoon salt and pepper
Dash of Tabasco sauce

In large skillet, brown ground beef and drain.
Add pepper, tomatoes, chili powder, garlic powder, salt,
pepper, and ¾ cup water. Cover and simmer for 15-20 minutes.

In medium saucepan, mix ½ bottle of ketchup
with 4-5 cups of water, Tabasco and salt to taste.
Bring to a slow boil, stirring often.

When meat and sauce are ready, placed a tortilla in hot oil
for 4-5 seconds until soft. Remove and drain on paper towel.
Top tortilla with meat, onions, lettuce, and cheese.
Pour sauce over top and serve immediately.

Apple Crisp

4 cups sliced apples
¼ cup sugar
1 teaspoon cinnamon
1 teaspoon salt
¼ cup water
¾ cup self-rising flour
1 cup sugar
1/3 cup butter
cup self-rising flour
½ cup sugar

Preheat oven to 350°.
Sprinkle apples with ¼ cup sugar and cinnamon.
In a separate bowl, combine remaining ingredients
and pour over apples. Bake for 40 minutes.
Serve warm with ice cream!
