
(courtesy of Steve Stewart) 2 lbs. ground beef 1 large bell pepper (diced) 1 onion (diced) 1 head of lettuce (shredded) 2 cans tomatoes (diced) 1 lb mild Cheddar cheese (grated) 1 bottle ketchup 1 pack of corn tortillas 4 tablespoons chili powder 1 tablespoon garlic powder 1 teaspoon salt and pepper Dash of Tabasco sauce In large skillet, brown ground beef and drain. Add pepper, tomatoes, chili powder, garlic powder, salt, pepper, and ¾ cup water. Cover and simmer for 15-20 minutes. In medium saucepan, mix ½ bottle of ketchup with 4-5 cups of water, Tabasco and salt to taste. Bring to a slow boil, stirring often. When meat and sauce are ready, placed a tortilla in hot oil for 4-5 seconds until soft. Remove and drain on paper towel. Top tortilla with meat, onions, lettuce, and cheese. Pour sauce over top and serve immediately. |
4 cups sliced apples ¼ cup sugar 1 teaspoon cinnamon 1 teaspoon salt ¼ cup water ¾ cup self-rising flour 1 cup sugar 1/3 cup butter cup self-rising flour ½ cup sugar Preheat oven to 350°. Sprinkle apples with ¼ cup sugar and cinnamon. In a separate bowl, combine remaining ingredients and pour over apples. Bake for 40 minutes. Serve warm with ice cream! |
