Oatmeal Peanut Butter Cookies
1 1/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter (softened)
3/4 cup granulated sugar
2 eggs
3/4 cup packed brown sugar
1 teaspoon vanilla or grated orange peel
3 cups quick (or old fashioned) oats
1 2/3 cup (11 ounce package) peanut butter morsels
Preheat oven to 375 degrees.
Combine flour, baking soda, salt, and cinnamon in small bowl.
Beat butter, granulated sugar, brown sugar, eggs,
and vanilla in large mixer until creamy. Gradually
beat in flour mixture. Stir in oats and morsels.
Drop by tablespoon onto ungreased cookie sheet.
Bake for 7-8 minutes for chewy cookies or
9-10 minutes for crispy cookies.
Let stand for 2 minutes and remove to wire racks to cool completely.
Cinnamon Snails
4 ounces butter (softened)
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
1 cup all purpose flour
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon
1 lightly-beaten egg
1 cup minature semi-sweet chocolate chip morsels
In a mixing bowl, beat butter with an electric
mixer on medium to high speed for 30 seconds.
Add brown sugar, 1 teaspoon cinnamon, and
baking powder; beat until combined.
Beat in egg and vanilla. Beat in as much flour
as mixer will hold. Stir in any remaining flour with spoon.
Divide dough in half.
In a small mixing bowl, stir together granulated sugar
and 1/2 teaspoon cinnamon and set aside.
On a lightly floured surface, shape each half of the
dough into a 12-inch log. Cut each log into twenty-four (24)
1/2 inch pieces. Roll each piece into shape of a rope.
Coil each rope into a snail shape using one end to
make a small coil for the eye, and coiling the other end in
the opposite direction to make the body.
Place the cookies 2 inches apart on lightly greased
baking sheet. Brush each with egg white and sprinkle
with cinnamon-sugar mixture. If desired, insert
2 chocolate chips in the small coiled end for "eyes"!
Bake in preheated 375 degree oven for 8 minutes
or until edges are firm and the bottoms are lightly browned.
Remove cookies from pan and cool on rack.
