Carrot Cake
2 cups sugar
1½ cups salad oil
4 eggs
2 teaspoons baking powder
2 teaspoons baking soda
2 cups cake flour
2 teaspoons cinnamon
1 teaspoon salt
3 cups carrots
½ - 1 cup pecans

Combine sugar, salad oil, and eggs.
Sift all other dry ingredients together and add to mixture.
Pour into two (2) 8" round pans and bake in preheated
325° oven for 30 minutes.

Check for doneness -- may (will!) require additional 15 minutes!!
Yum! Yum! Yum!

Cream Cheese Icing
1 eight-ounce package cream cheese (softened)
1 stick butter (softened)
1 pound Confectioner's Sugar
1 teaspoon vanilla
½ cup pecans (chopped)

Blend butter and cream cheese. Add in sugar;
vanilla and pecans!
