Turnips
12 ounces fresh turnips (3 strips)
Chopped bacon (1 ham hock)


Render bacon until very crisp.
Add clean turnips and stir until they melt.
Cover with water; add salt and cook until tender.




Sweet Potatoes
Place a layer of aluminum foil on a large cookie sheet.
Lightly butter large sweet potatoes.
Place in pan (uncovered) and bake very slowly
in 250° oven. (About 2 hours!)
Leave on counter until cool.

Melt one stick of butter and 1 cup brown sugar.
Peel potatoes and place in baking dish --
pour sugar and butter mixture over potatoes and heat.




Gravy
Add fat (oil, shortening, or butter) to skillet.
Add flour to make thick rue. Brown very slowly.
Add stock and salt/pepper to taste!
