Southern Cornbread Dressing
4 cups day-old cornbread
2 cups day-old bread
1 large chopped onion (optional)
1½ cups chopped celery (optional)
2 cups stock (see recipe below!)
1 egg (beaten)
½ teaspoon sage


Mix all ingredients, adding more stock
to make moist (if necessary).
Bake for 45 minutes in 325° oven.


Stock
giblets from turkey
1 onion
3 celery stalks
salt/pepper

In "stock pot", add giblets, onion, celery stalks, salt, and pepper.
Cover with water and cook until tender.
Drain liquid -- this liquid is the stock!
Discard the giblets and place in refrigerator until ready to use.
