POTATO SOUP
6 small potatoes
(cubed and cooked until "fork tender")
1 quart milk
3 tablespoons butter -- melted
1 small onion -- diced
2-3 tablespoons flour

salt -- to taste
pepper -- to taste
celery salt -- to taste
cayenne pepper -- to taste
parsley (garnish)

Melt butter, and saute onions and seasoning about 3-5 minutes.
Add flour, and stir about one (1) minute over medium heat.
Drain potatoes well. Mash with potato masher and add cold milk.
While milk is still cold, stir in butter and seasoning.
Simmer 5-15 minutes over very low heat.
Be careful not to burn!!
GARLIC BUTTER
1/2 cup butter
1/2 teaspoon thyme
1/2 teaspoon rosemary

1/2 teaspoon oregano
1/2 teaspoon basil
4 cloves garlic

Melt butter and stir in seasonings.
Brush on bread and toast.
Sprinkle with cheese and parsley -- return to oven to melt cheese!
Try using different types of breads!!
