Air Date: March 27, 2001 prepare a delicious Easter Sunday dinner! Her special guests returned to help!!! Stephanie Kudulis and Sue Davis (Both of these ladies assist Miss Judi in the day-to-day activities of the bakery!) and Adrienne Sheil (a special friend!) Sweet Potato Casserole (Preheat oven to 350 degrees.) | 2 cups cooked sweet potatoes (1 large can, drained) 1/2 cup butter 1/2 cup granulated sugar 2 eggs 1 teaspoon vanilla 1 tablespoon cinnamon 1/2 cup chopped pecans (save a sprinkling for the top!) 1 cup small marshmallows (save a little for the top!) Topping Mixture 1/2 cup brown sugar Sprinkling of coconut 1/4 cup pecans 1/2 cup marshmallows Cook and mash potatoes. Add butter, vanilla, cinnamon, eggs, and granulated sugar. Place in buttered baking dish and add topping mixture. Sprinkle marshmallows and pecans on top and bake for 20 minutes. Corn Cornbread (Preheat oven to 450 degrees.) |
1 1/2 cups cornmeal | 1 cup buttermilk 2 eggs 2 tablespoons pimento (for color -- optional) 1 can creamed corn 1/2 cup vegetable oil 1/4 cup chopped onion 1 cup shredded cheese Combine all ingredients and stir well. Pour half of the batter in pan and add cheese. Pour remaining batter on top and bake for 30 minutes. "Try-to-Make-It, Try-to-Eat-It" Pie (This pie consists of 5 layers!) | 1st Layer | 1 cup flour dash of salt 1 stick butter (softened) 2nd Layer 8oz cream cheese (softened) 1/2 container Cool Whip (large) 3rd Layer 1 small package instant chocolate pudding 1 1/2 cup milk 4th Layer 1 small package instant vanilla pudding 1 1/2 cup milk 5th Layer Remaining Cool Whip Preheat oven to 350 degrees. Combine 1st layer ingredients until dough forms. Place in 9x13 pan and bake for 20-30 minutes -- just until brown. Allow crust to cool while preparing other layers!!! Don't begin adding additional layers until the crust is thoroughly cooled! Once crust has cooled, begin with 2nd layer and add each layer to the crust. This recipe looks beautiful in parfait glasses or a small truffle dish! |
