Air Date: March 06, 2001 Earlybird Muffins! Preheat oven to 350 degrees and crumb-coat three (3) 8" cake pans. | (Or, 12 Texas-sized muffins ... or, one (1) 1 pound loaf pan.) Dry Ingredients 3 cups cake flour 1 teaspoon cinnamon 1 teaspoon baking soda 1/2 teaspoon salt 1 3/4 cups sugar Wet Ingredients 2 large eggs 1/2 cup applesauce 3 tablespoons vegetable oil 1 3/4 cup bananas (mashed) 1 1/2 teaspoon vanilla 8 ounces crushed pineapple (undrained) Combine dry ingredients in large bowl, stir together wet ingredients -- don't beat!! Bake for 20-25 minutes Orange Spread 1/8 teaspoon orange zest | 3 ounces cream cheese 2 cups powdered sugar Cream together and use in place of butter!! Mmmmm..... Bavarian Cream 2 eggs | 2 egg yokes 1/2 cup corn starch 1/2 cup granulated sugar 2 cups half-and-half or heavy whipping cream 2 tablespoons butter 2 teaspoons vanilla Whisk together eggs, cornstarch, and sugar in sauce pan. Gradually add cream and bring to a biol over medium heat. Cook until thickens (usually between 30 seconds and one (1) minute.). Cover and chill. ***Flavorful Tips*** 1/3 cup peanut butter can be added instead of butter! 1 tablespoon instant coffee can also be added with the cream. 1/2 cup fruit -- lemon, banana, pineapple, strawberries, or even coconut! |
