Angel Food Cake
(Light as air and NO fat!!)

10" tube pan
1 cup cake flour
1 1/2 cups confectioner's sugar
1 1/2 cups egg whites (about 12 eggs)
1 1/2 teaspoon cream of tartar
1/3 teaspoon salt
1 1/2 teaspoon vanilla
1 cup granulated sugar

Sift flour and confectioner's sugar together.
Measure egg whites, add cream of tartar, salt, vanilla, and granulated sugar -- beat until foamy. Then beat until stiff peaks form.
Stir gradually into cake flour and confectioner's sugar mixture.
Pour into ungreased tube pan and bake in 350 degree oven for 50-58 minutes (until top is golden brown).

Strawberry Sauce

2 16oz packages frozen strawberries (4 cups fresh)
1 cup granulated sugar
4 tablespoons corn starch
1/2 cup water

Cook berries and sugar until sugar melts. Add corn starch to 1/2 cup water. Add this liquid gradually to hot mixture. Cook until liquid thickens.

This recipe can be used with a variety of fruits: raspberries, blueberries, peaches (cut in small pieces!) -- try a different fruit each time!!
