Cinnamon Cake

Preheat oven to 350 degrees and crumb-coat 8" square pan. 2 cups cake flour 4 teaspoons cinnamon 2 teaspoons baking powder 1/2 teaspoons salt Sift together onto parchment paper 1 1/3 cup sugar 2/3 cup vegetable shorting (softened) 2/3 cup milk Cream together. Add 3 large eggs Add sifted dry ingredients to creamed ingredients and bake for 30 minutes.

Simple Chocolate Glaze

1 tablespoon vanilla 6 ounces block chocolate (3 cubes) 1 stick butter 2 tablespoons water Microwave for 1 1/2 minutes to soften. Stir in 6 ounces confectioner's sugar. (About 1 1/2 cups.) Drizzle over cake while it's still warm! Sprinkle with nuts, coconut, etc.!.
