Carrot Cake

4 cups cake flour 2 teaspoons baking soda 2 teaspoons baking powder 2 teaspoons cinnamon 1/2 teaspoons salt 1/2 teaspoons ginger or orange rind 3 cups sugar 2 cups oil 5 large eggs Preheat oven to 375 degrees. Cream sugar, oil and eggs together. Sift all other dry ingredients together onto parchment. Add sifted ingredients to creamed ingredients. Add in 3 cups grated carrots and 1 cup chopped pecans. Turn oven down to 350 degrees and bake for 30 minutes. Let cool for 10 minutes.

Cream Cheese Icing

1 stick butter 1 8-ounce package of cream cheese 1 pound confectioner's sugar 1 teaspoon vanilla 1 teaspoon orange zest Cream butter and cream cheese until no lumps are visible. Add in sugar and flavoring. Add 1/2 to 1 cup chopped pecans.
