Morning Glory Muffins
"Glory-Be Muffins!!"

2 cups all purpose flour
1 1/4 cups sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
3 large eggs
1 cup oil
2 teaspoons vanilla
2 cups finely grated carrots
1/2 cup raisins
1/2 cup pecans
1/2 cup coconut
1 apple (peeled and diced)

Sift all dry ingredients together into large mixing bowl.
Add wet ingredients. Stir until just mixed.
Add last five ingredients and stir just until incorporated.

Use an ice cream scoop to measure into Texas-sized muffin cups and bake 25-30 minutes in 350 degree oven.

Makes a great gift idea.



Cheese Triangles
(Almost a cracker!)

1/2 cup butter
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon red pepper (optional)
1 teaspoon salt
3 tablespoons shortening
3/4 cup milk

Add dry ingredients in large mixing bowl. Cut shortening into flour mixture and roll into a ball.

Roll out flat about 1/2" thick and brush top with milk. Sprinkle with 1/2 cup shredded cheese.

Cut into triangles and bake about 20 minutes in 350 degree oven.

Eat whle hot or use like a cracker with soup or stew!!
