Here's the recipe she was working on ... Pumpkin (or Sweet Potato!) Pie Pie Ingredients: ¾ cup raw sugar ½ teaspoon salt 1 teaspoon cinnamon -- optional ½ teaspoon ginger -- optional ¼ teaspoon cloves -- optional 2 eggs 2 cups pumpkin OR 2 cups sweet potato 12 ounces evaporated milk Crust Ingredients: 1 package chocolate graham crackers (crushed) ½ cup powdered sugar ½ cup butter (melted) Topping Ingredients: 1 8-ounce package cream cheese (softened) 1 cup powdered sugar 2 cups whipped cream (can use Cool Whip) Preheat oven to 350°. Mix all crust ingredients and press in bottom of 13x9 glass dish. Bake for 10 minutes, then cool. Combine all pie ingredients and pour into cooled crust. For topping, cream sugar and cream cheese, then add whipped cream. Layer this on top of cooled pie. Decorate with crushed pecans, cherries, or any festive ingredient of your choice! |
